So here’s a quick tip I learned about making oatmeal that I wish I knew sooner. If you take the exact same amount of oats as you usually use (1/2 cup is 1 serving) and double the amount of water (2 cups instead of 1) and double the cooking time, you will end up with a bowl of oatmeal that is not only double the amount of volume but also a much creamier consistency. I find that when I make it this way, I have to let it sit for a bit after cooking to let the remaining water absorb into the oats. Then I add my ground flax, some vegan protein, a little bit of peanut butter and whatever else might be going into the bowl. Play around with the recipe until you find your perfect texture, but if you are the type of person that like QUANTITY, you will appreciate this tip! Rita, I add a product called VEGA ONE to my oatmeal or a shake. I don’t use nearly as much as recommended, but I sprinkle some in the same way I do the flax seed. 1 serving as recommended adds 15 grams of protein, but since I only use about 1/4 of the recommended amount it only amounts to a few grams of protein, but also adds lots of vitamins, minerals, and probiotics. I have only started doing this recently and will probably increase the amount I use daily. It is less expensive to add soy protein, but I feel I get my fill of that. The VEGA ONE gets it’s protein from plants and has no soy, no gluten and no dairy. It does change the color of food to look a little greener, so the cinnamon in oatmeal helps make the color better 🙂
