With the kids coming into town this weekend, Mitch and I have been doing an awful lot of shopping. FYI Gardein products are buy one get one free this week at Publix. Of course, I had already stocked up on them, but bought some more last night. I buy the chicken tenders which I use for chicken parm and buffalo chicken “wings,” but there are many varieties to choose from and though I don’t eat much frozen food, these are great to have in the freezer. I also buy the burgers and if you eat Boca Burgers, the Gardein version are a bazillion times better! I saute them in a bit of coconut oil–a couple of minutes on each side. Last night I had one and even indulged myself by actually putting it between 2 pieces of bread (I have pretty much given up bread during the week but am already feeling like I am on vacation with the kids coming in)
And though I am NOT on a true vacation, my schedule will be abbreviated over the next few days. Today I will be training and teaching. Tomorrow I will be a the gym for the 9:30 class. Monday, Ellen will be subbing for me, both at 8:30 and 11:30. Tuesday I plan on being at my 11:30 class, but have cancelled the evening classes. I am not sure what Wednesday holds yet, so check back! In the meantime, go buy some Gardein products and you can consider a meatless Monday or a vegan Thursday or….Well, you get the message. Every day more and more reports are showing that people who eat less meat live a longer and more importantly healthier life. Consider scanning my recipes and trying the buffalo chicken wings. They are beyond easy and require only 3 ingredients….chicken tenders, Louisiana Pure Hot Sauce and a butter substitute (I use Earth Balance) but if you wanted to make change, slowly, you could, of course use real butter. And your kids will love them.
