Happy Thursday. Derek’s friend James and I agree upon Thursday being our favorite day of the week. As many of you already know, it’s the night the vegans (and non-vegans) gather for our weekly feast. Treated as the holiday it is, each and every week, we gather for a mostly vegan, mostly home-cooked meal, love and laughter. As with most major holidays, for me, it now begins the eve before when Mitch, Kyle and I eat at some local venue where someone else does the cooking!
Trying to make vegan food healthy and tasty is always an effort. I can make some really tasty vegan food and some really healthy vegan foods but combining to make for an entire meal is challenging so I always come back to what I believe the entire key to life is–BALANCE!
Tonight is pasta night, so I will balance that with a huge salad, a baked veggie casserole and anything else healthy and low fat/calorie that I can think of! In the end, I realize, it doesn’t matter what I feed them, it matters that I DO feed them a home-made meal. After all, my friend/client Jane says she likes to come and it doesn’t matter what’s on the menu. She likes to come for the single ingredient that is always added to the food–LOVE.
The payoff for me is always the hugest. I trick em with the food, but what I get in return is a houseful of hungry, appreciative, youthful energy and a house filled with silly laughter and of course, LOVE.
What more could I ask for in this month that is dedicated to the heart and this week that is dedicated to LOVE?
