For the Love of Veggies—and the Animals, of Course
Good morning. Lately, I have been into cooking fresh beets and adding them to my salads. I was always intimidated by how to cook/peel them. If you cut off the greens (yes, buy them with the greens and you get a bonus…you can cook the greens just as you would swiss chard, spinach or kale. I tried them for the first time, sauteing them with lots of garlic and they tasted a lot like escarole, to me) and cut off the other end, you can just scrub them like potatoes and wrap them in foil to roast them. They will take about an hour (at least) but once done and cooled, the skins will come off easily. The red ones are delish but rather messy. If you can find golden ones, they are mess free. I found organic ones at The Boys in Boynton Beach and they are often available at Whole Foods as well. Beets, like most all veggies, are packed with nutritional value. If you cook the greens on side, you get twice as much nutrition, but I admit to eating them strictly because I really like them!
Did I mention that there is also a brand new vegetable which is bound to be hailed as a super food, any minute. Carole told me about kalettes a couple of weeks ago and then I saw them in a nutrition newsletter. They are a hybrid mix of brussel sprouts and kale and look like this:
I haven’t tried them yet, because I haven’t seen them yet, but they are supposed to become available at both Whole Foods and Trader Joe’s. I don’t know exactly what they will taste like but I am a big fan of both the veggies it comes from….and I do know they look pretty cute!
